Indonesian cassia cinnamon exporter Cassia Cinnamon
Cinnamomum burmannii from Kerinci. Our flagship line.

Origin & botany
Indonesia is the world's largest producer of cassia cinnamon, and our bark is Cinnamomum burmannii grown on the volcanic highland slopes around Kerinci, Jambi. Cassia is a different plant from Ceylon 'true cinnamon' (Cinnamomum verum). Its bark is thicker and harder and rolls into a single-layer quill, where Ceylon rolls into many thin layers. It also has a stronger flavor and more natural oil, which is why it's the cinnamon most of the world cooks and bakes with.
Also traded as Korintje (Korintji) cinnamon, Kerinci cinnamon or cassia vera. Processing buyers, see broken cassia for grinding and extraction; retail packers, see cut sticks for private label.
Harvest & processing
Bark is stripped by hand from mature, coppiced trees. Timing matters, because it sets how thick the bark is and how well it curls. The bark is dried, rolled into quills and sorted by hand into AA and A sticks. AAA is a mixed lot of the two. Whatever does not make a stick grade is cut or broken into KABC and KBBC, which are sold on oil content. Thick sticks also go to cassia oil distillers.

Oatmeal and smoothies
A pinch of ground cassia in breakfast bowls and shakes.

Sticks simmered in water or added to potpourri.
Traditional tonics
Used in warming drinks across Southeast Asia, traditionally for colds.
Cassia oil
Thick sticks go to distillers for cassia oil, used in flavouring, herbal products and perfume.
