Origin & botany
Nutmeg is the seed of Myristica fragrans, a tree native to Indonesia's Banda Islands. Until the 19th century it grew nowhere else on Earth, which is why the Dutch East India Company fought wars to control it. One fruit gives two separate spices: nutmeg (the seed) and mace (the lacy aril wrapped around it).
Harvest & processing
The ripe fruit is picked and split. The seed (still in its shell, wrapped in mace) is taken out and sun-dried for several weeks, until the kernel rattles loose inside the shell. That rattle means it is ready to crack and grade by size.
