Origin & botany
Mace is the bright red, net-like aril that wraps around the nutmeg shell inside the fruit. It dries to a golden amber-orange, has a flavor close to nutmeg but more delicate and slightly peppery, and commands a significantly higher price than nutmeg itself because of how labor-intensive it is to harvest.
Harvest & processing
Mace has to be peeled by hand from the shell as soon as the fruit is split open, because it cannot wait. The peeled arils are flattened by hand and sun-dried separately from the nutmeg seed inside, then graded as whole "blades" or broken pieces.
