Cassia Cinnamon
Cassia Vera, also known as Cinnamomum burmannii or Padang cassia, is a highly sought-after variety of cinnamon primarily grown in Indonesia, particularly in regions like Sumatra and Java. It is distinguished by its thick, hard bark and strong, spicy flavor, making it one of the most commonly used types of cinnamon in the global spice market. Compared to Ceylon cinnamon (also known as true cinnamon), Indonesian cinnamon has a more robust flavor and contains higher levels of coumarin, a compound that can be toxic to the liver in large quantities. This variety is extensively used in baking, beverages, and spice blends due to its intensity and lower cost. It is sold both as sticks and ground powder and is also utilized in traditional medicines and aromatherapy.
